"My Plant-Based Transformational Journey”

At the tender age of seventeen, I began my journey to a plant-based diet when I became a Sabbath observer and keeper in 1990. I began to eat more plant-based foods. Except for fish, I stopped eating chicken and all other animal foods. From 1993 to 1998, I didn’t eat any fish. I broke my plant-based diet in order to please my uncle’s wife.

My wife, two beautiful daughters, and I contracted COVID-19 in March of 2020. I was sick three times in the same month. As a result, my body was filled with mucus. My body’s joints had become inflamed and were causing me pain.

My wife decided to take my oldest daughter, who was turning sixteen at the time, to Dubai to celebrate her sixteenth birthday in July of 2021. Her younger sister joined them on their celebratory adventure. I decided to spend nine days at a lifestyle center in upstate New York detoxing my colon, liver, gallbladder, kidneys, and blood.

I arrived at the Lifestyle Center at around 8:00 a.m. My urine, saliva, and blood were all collected by the lifestyle coach. He also performed a major organ test. My heart was weak, according to the results. My liver and gallbladder were nearing the end of their lives. My transverse colon was obstructed, which could lead to leaky gut syndrome. The test also revealed that I was sleep-deprived and that my stress level was extremely high.

From that point forward, I resolved to embark on a major health reform and spiritual reconnection with my mental, physical, spiritual, and social areas. How to prepare raw, plant-based breakfast and lunch recipes were taught to me. I went shopping for all new plant-based items and returned to Brooklyn, New York, to completely renovate and commercialize my kitchen. I discarded any food that did not contribute to the production of healthy blood.

I thank God for giving me a second chance to embrace a committed, healthy lifestyle, starting in July 2021. One of my guiding life slogans is, “Healthy Living IS Committed Living.” Moreover, we should all strive to become conscious, plant-based eaters and thoughtful consumers. It is essential to cultivate a mindful approach to food preparation.

“As a man that is passionate about life, Stephon Bynoe embodies many gifts and roles as pastor, husband, father, teacher, friend, and exceptional mentor to many. Yet, when observing Stephon, you’ll readily notice his creative knack for putting together vegan/vegetarian delights with ease. After an unanticipated health crisis struck in April of 2022, where I experienced extreme dehydration and could no longer tolerate the typical animal-based diet, I had the privilege of learning firsthand from Stephon about the delicious and nutritious plant-based world of fruits, veggies, grains, and nuts that we so often neglect in favor of our fast-food laden society. Not only did I learn how to throw together vegan plant-based meals that were exceptionally delicious, but these meals are also extremely nutritious and simple to prepare. I must say, though all his cuisines are particularly delightful, my personal favorites are his staple breakfasts with cashew milk that may include a number of fruits, grains, and nuts. I would wholeheartedly advise anyone looking to transition into the vegan/vegetarian world to pick up this book, as you will not be disappointed. Today, as a result of adhering to the plant-based recipes detailed in this book, I am honestly thriving, well, and energetic as ever. Sincere thanks to the chef.”
